Lemon water in the mornings is a favourite routine of mine. It has numerous health benefits and I find the zing it the perfect wake up to get you up and going. I am a big fan of lemon as a flavour – it makes a great salad dressing, it is great in sweets and is perfect to spice up your plain water throughout the day. As oats are my favourite meal of the day, I figured it was time for them to have a little zing too.
The addition of strawberries to this recipe is simply because I had them on hand (most of the time they are too expensive) so I am sure they could be replaced with any of your other favourite fruity oat toppings such as other berries or peaches. This is a quick and simple breakfast which fills me up and wakes me up for the day.
Lemon and Strawberry Oats:
1/2 cup of oats (gluten free if necessary)
1/2 cup milk of your choice
3/4 cup water
1 scoop of strawberry protein powder (optional)
Juice of half a lemon (save the other half!)
Handful of strawberries
First: place the oats, milk and water in a saucepan on a stove. While bringing to the boil stir in your protein powder (if using). It is important to stir it otherwise you will get lumps! Also add half of you lemon juice.
Second: once the oats have boiled, turn them down to a simmer and continue to stir. Wait until they have reached you desired texture – usually when they grow in volume and absorb all the liquid – then remove from the heat.
Third: squeeze the other half of your lemon and stir it in now. Then garnish with your strawberries and other favourite toppings like seeds and nuts.
